This was probably the most exciting kitchen tour I had ever done. I met Chef Sandy Tran, one of the owners, Marc, and got the full exclusive tour of the kitchen and there was a lot to see. The picture depicts me in the blue jacket, my brother Felix in the orange jacket, and Sandy Tran. in this picture we are all looking at a wide spread of the same kind of chocolate. I think it was vanilla-cinnamon. They were good. Very good. We are all backgrounded by the machines, including the shiny, new chocolate emulsifier that hasn't even been used yet. Chef Sandy tells me that it hasn't been used yet because they don't use white chocolate all that much. There was also a bunch of molds that people were coloring with paint guns inside of a high-pressure room, which I think is very clever. There were three chocolate emulsifiers, one for dark chocolate, one for milk chocolate, and the unopened one for white chocolate. There were also some cinnamon chocolates, which were my personal favorite. In my opinion, the chocolate counters the spiciness of the cinnamon. These are not in the photo, but they were red domes with gold speckles on them. It was good.
