Today we went to Dandelion Chocolate, and there was a lot to see. On the left wall there was an assortment of chocolates and truffles. On the right was a big blackboard filled with the process of how they create their chocolate, with just two ingredients. Cacao and pure cane sugar. And there was a melanger. With two stone wheels that spun. And spun . And spun some more. And its purpose was to smooth out chocolate and make it ready for the next stage. On the right side there was a book. And a diagram/walkthrough of how they made their chocolate. Below is me at the melanger.
To the right is the diagram. As you can see, there are a lot of steps. And a lot of big words. So it was complicated to me how you can't just puree chocolate, throw in sugar, and harden it. And then I saw that they detailed the process from the very beginning. It started with picking, and went all the way up to the actual product. So there was a lot to it. And there is also a picture of me &Marc. Marc is the owner of andSons, which was the first tour that I did.
Marc is a good friend of mine, and also a mentor of sorts. One of the major chocolate events is the Northwest Chocolate Festival, and I would know nothing about it if it weren't for Marc.
